Mexican Shrimp Cocktail


12 shrimp in shell
1 to 2 cans Mexican Beer (or 50/50 Beer & Water)
1 tbsp Old Bay Seasoning
1 piece of shallot
1 to 2 cloves chopped garlic
Squeeze of lemon juice
1 cup pico de gallo
1 cup cocktail sauce
Squeeze of lime juice
Fresh, diced avocado


Add beer, Old Bay seasoning, shallot, garlic and lemon juice to a sauce pan and bring to a boil. Add shrimp in shell and cook for about 10 minutes until bright red. Once cooked, remove from saucepan and drop into ice water to chill and stop cooking process. Peel shrimp and devein. Chop shrimp into bite sized pieces and place in bowl. Add the pico de gallo, cocktail sauce and squeeze of lime juice to shrimp. Stir in well. Chill shrimp mixture until ready to serve. When ready to serve, fold in freshly diced avocado being careful not to mash the avocado. Serve over lettuce or on half of an avocado with tortilla chips.
